
These strawberry muffins are packed with sweet, juicy strawberries and topped with a raw sugar/cinnamon sprinkle. They're the perfect treat for breakfast or an afternoon coffee break!
How to make strawberry muffins:
These muffins are easy to make and the best part is, they're made in ONE BOWL! I've found if you just sprinkle in and layer the dry ingredients, there's no need to mess with separate bowls. This is just home baking after all and no one likes extra dishes!
The first step in making these strawberry muffins is to prep the strawberries. I like to dice them into ¼ inch bits. They don't need to be perfect but just small enough to mix into the batter. Once diced, you'll coat the berries in a sprinkle of flour. This will help them not make your batter runny and they'll hold their shape better. You can then set these aside until your batter is made.

Can you substitute strawberries for blueberries in muffins?
Yes, you can! If you have a favorite blueberry muffin recipe, you can swap the berries. I would just highly suggest coating the strawberries in flour as stated above since they have more moisture then blueberries when diced.
The next step in making these muffins is mixing together the wet ingredients. You'll first start by creaming together the butter and sugar using a hand mixer. You could also use a whisk if you don't have a mixer but this batter does get thick. Once mixed, it should be nice and fluffy like the photo below.

After creaming the butter, add in the eggs, vanilla, and milk and mix again until smooth. I totally forgot to take a photo of the vanilla and eggs...but they got added! Mix that all up then you're ready for the dry ingredients.

When adding in the dry ingredients, layer them in the order listed and sprinkle them over the batter. I add in the flour evenly over the wet mixture then sprinkle in each ingredient over top in layers. It's hard to tell in the photo but you can see the wet ingredients peeking through the edges.

Use a spatula and mix everything together just until you see no more dry flour then add in the strawberry bits. Fold the strawberries in gently just until they're evenly distributed.


When you're ready to bake and have prepared the batter and the muffin tin, you can fill the muffin cups almost to the top. It should be just enough for 12 standard sized muffins. I didn't have any paper muffin cups on hand when I made these so you can see I sprayed the heck out of the pan with non-stick spray!

How to make sugar topping for muffins
In a small bowl, mix together 2 tablespoons of raw sugar and ½ teaspoon of cinnamon. This will be just enough topping to distribute evenly among 12 standard muffins.

How to know when muffins are done baking:
To check if your muffins are done, you can insert a toothpick into the center of a muffin towards the center of the pan. If it comes out clean, your muffins are done! These strawberry muffins should take about 20-23 minutes.



Strawberry Muffins
Ingredients
- ½ cup softened butter
- ¾ cup sugar
- 2 eggs
- ½ cup milk
- 2 teaspoon vanilla extract
- 2 cups all purpose flour (plus 2 tablespoons)
- 2 teaspoon baking powder
- ½ teaspoon salt
- 1 and ½ cups chopped strawberries
- 2 tablespoons raw sugar
- ½ teaspoon cinnamon
Instructions
- Line a muffin tin with paper cups or spray generously with non-stick spray. Pre-heat your oven to 400°.
- Dice your strawberries into bits about ¼ inch in size. Toss them in 2 tablespoons of flour and set aside.
- In a separate large bowl, add the softened butter and sugar and beat with a hand mixer until light and fluffy.
- Add in the eggs, milk, and vanilla extract and beat again until everything is smooth and combined.
- in the same bowl, sprinkle in the flour, baking powder, and salt. Use a spatula to stir everything together just until you see no more dry flour.
- Gently fold the diced strawberries into the batter.
- Spoon the batter evenly into the prepared muffin cups.
- Mix together the raw sugar and cinnamon and sprinkle over each muffin.
- Bake for about 20-23 minutes or until a toothpick inserted in the center of a muffin comes out clean.
