This cream cheese cannoli dip blends ricotta cheese with rich cream cheese and mini chocolate chips giving you an easy, delicious version of a deconstructed cannoli. This dip is perfect for enjoying with cookies, crackers, fruit, or filled into waffle cones.

How to make Cannoli dip:
- Step one is to make sure you have full fat ricotta cheese. This is usually labeled as whole milk or even double cream. The lower fat versions are much too watery and will give you a runny dip. You'll also want to make sure that your cream cheese is soft and at room temp. I will sometimes cheat and pop it in the microwave for a few seconds at a time. Just make sure it's not hot or warm or it could make the ricotta runny,

- The next step is to blend together your softened cream cheese and the ricotta. This only takes a minute or two with the hand mixer. You could also use a stand mixer If you have one but it's not necessary. As long as your cream cheese was nice and soft, you should have no lumps after blending.

- After blending the cream cheese and ricotta, you'll add in the powdered sugar, vanilla extract, and cinnamon and blend one more time. It should be nice and smooth at this point. The cinnamon just adds a nice hint of warmth but is not overpowering. Feel free to omit it If you're not a fan of cinnamon or add more If you're obsessed with cinnamon like I am!

- Once everything is blended and smooth, you can use a spatula to fold in the mini chocolate chips. I used about ¾ cup but start with that and add more if your heart desires.


- When everything is ready, you can add the cream cheese cannoli dip to a serving dish and top with more chocolate chips and chopped pistachios if you're using them. You can also add the pistachios and other toppings on the side.

Why use cream cheese instead of the traditional mascarpone?
Short answer...I love cream cheese. Longer answer...it's much thicker and creamier and I think gives a much better, thicker texture when making a dip instead of an actual cannoli.

Cream Cheese Cannoli Dip
Ingredients
- 8 ounces softened cream cheese
- 15 ounces ricotta cheese (whole milk or double cream)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- ⅛ teaspoon cinnamon
- ¾ cup mini chocolate chips (plus more for garnish)
- ¼ cup chopped pistachios (optional)
Instructions
- Add your softened cream cheese to a large bowl. Drain any excess liquid from the top of the ricotta tub then add the ricotta to the bowl.
- Blend the ricotta and cream cheese together with a hand mixer until smooth.
- Add the powdered sugar, vanilla, and cinnamon and blend again just until combined.
- Fold in the mini chocolate chips then add everything to a serving dish.
- Top with more mini chocolate chips and chopped pistachios. (If serving for a crowd, I place the pistachios in a separate bowl for anyone who would like them)
