How to Make 3 Ingredient Peanut Butter Cookies

Step 1: Make the dough

Add the peanut butter, sugar, and egg to a bowl and use a hand mixer to combine until it forms a dough. It might look crumbly but it will come together as you scoop it.

Step 2: Roll into balls

Scoop and roll the dough into balls (about the size of a golf ball) and place them on a baking sheet lined with parchment paper. I like to roll them between my palms to make them nice and round and to smooth out the dough.

Step 3: Make the classic crisscross pattern

Use the back of a fork to gently press down on each cookie in both directions to create that classic peanut butter cookie look. Don't press down too hard but just press enough to make the marks on each cookie.

Step 4: Bake

Bake until the cookies are just set around the edges. The inside may still look glossy. You don't want to over-cook these or they'll become too crumbly. They'll continue to firm up as they cool.

To Store:

Keep them in an airtight container at room temperature for up to 5 days. You can also freeze the baked cookies or even freeze the dough balls before baking.

Frequently Asked Questions

Are 3 ingredient peanut butter cookies gluten free?

Yes! Since there's no flour in this recipe, they're naturally gluten free. Just double check your ingredient labels to be safe.

Can I use brown sugar instead of white sugar?

You can, but the texture will be slightly more chew and they may spread a bit more.

Why are my cookies falling apart?

Usually this happens if they were overbaked or moved before cooling completely. These are best slightly under-baked.

Can I use brown sugar instead of white sugar?

What kind of peanut butter should I use?

The best type of peanut butter for these cookies is just a regular creamy peanut butter. The natural peanut butter contains too much oil and the cookies will not set up correctly.

Cook Time 8 minutes mins
Cooling time 15 minutes mins
Servings 10 cookies

Ingredients

  • 1 cup creamy peanut butter (not natural)
  • 1 large egg
  • ¾ cup white sugar

Instructions

  • Pre-heat your oven to 350℉ and line a baking sheet with parchment paper.
  • In a large bowl, mix together the peanut butter, egg, and sugar. I like to use an electric hand mixer but you could also use a spatula.
The dough might be crumbly but it will come together as you scoop it.
  • Once the dough has formed, use a cookie scoop or a spoon to scoop enough dough to make a ball about the size of a golf ball.
After scooping, roll the dough balls between your palms to make a smooth round ball.
  • Place the dough balls on the baking sheet then take the back of a form and make the criss cross pattern on the top of each cookie. Be careful no to smash them too flat.
  • Bake in the pre-heated oven for 8-9 minutes. The center might still look glossy but it's better to under cook these than over cook them.
  • Once the cookies are finished baking, remove them from the oven and allow them to cool before moving them.
  • Once cooled enough to move...enjoy!
  • Store in an air-tight container for up to 5 days.
