These Jello Marshmallow Rollups are such a fun and easy treat for kids (and grownups too!) They're perfect for parties, holidays, or an after-school surprise! I like to make these red and blue ones as a 4th of July dessert but you can use different flavors and colors making them for any occasion!

How to make Jello marshmallow rollups:
The first step is to mix the jello packets with boiling water. you'll want to stir them until the jello powder has completely dissolved.

Can I use any flavor of Jello for marshmallow rollups?
Yes! Any Jello flavor works and creates different colors and tastes. You can customize these for any event!
Once the Jello powder has dissolved, toss in the marshmallows and stir away! As they melt, they'll transform the Jello into a smooth, fluffy mixture. If the marshmallows aren't melting completely, microwave each bowl for about 30 seconds, then stir again until smooth.


Once the marshmallows are melted, you'll have a smooth frothy liquid. Then pour each jello mixture into an 8x8 pan that's been lightly sprayed with non-stick spray. Don't worry about any color swirls or bubbles. It will all come together as the magic happens in the fridge! These will need to set for at least 1 hour.

When these comes out of the fridge, they'll look almost the same as when you put it in, don't worry...it did its thing! Lay a piece of parchment paper down and flip the pans upside down. You can use any 8x8 pan but these silicone pans work amazing for helping to work out the jello easily.

Next is the fun part...rolling the pinwheels up! You'll just want to roll these up with your hands into a pinwheel and keep it as tight as you can. Then wrap it up in the parchment and place them in the fridge for 30 minutes so it can keep its form and stick to itself.


After the rolls have set in the fridge for 30 minutes, you can slice them into the pinwheels. You can make these as thin or thick as you like. Just be sure to use a very sharp knife to make clean cuts.
Tip: if your knife keep sticking to the rolls, you can lightly spray the knife with non-stick spray. If your rolls come undone, you can just use your hands to roll them back up.


How to store jello marshmallow rollups
These can be stored in the fridge in either on a plate, covered, or in an airtight container. They will stay fresh for up to 5 days.

Equipment
- 2 (8x8) baking pans (1 for each color)
- whisk
- Non-stick spray
- Parchment Paper
Ingredients
- 3 ounce box red jello (I used strawberry)
- 3 ounce box of blue jello (I used blue raspberry)
- 1 cup boiling water
- 3 cups mini-marshmallows
Instructions
- Lightly spray (2) 8x8 baking dishes with non-stick spray and set aside.
- Add the red and blue (or colors of your choice) to 2 separate medium sized bowls.
- Pour a ½ cup of water into each bowl and whisk each color separately until the jello is completely dissolved.
- Once the jello is dissolved, add 1 and ½ cups of mini marshmallows to each bowl and stir until the marshmallows are dissolved. (If the marshmallows are not melting, microwave each bowl for 30 seconds then stir again)
- Pour each mixture into a sprayed baking dish and refrigerate, uncovered for at least 1 hour.
- After the hour, run a knife along the edges of each pan and turn the jello mixture over onto a sheet of parchment paper.
- Use your hands to roll up each flavor into a tight roll. Wrap the rolls up in the parchment paper and refrigerate for 30 minutes.
- After the rolls have set for 30 minutes, unroll the parchment paper. It's ok if it sticks a little bit. Slice each roll into pinwheels about ¾ inch thick.
- Store in an airtight container in the fridge for up to 5 days.
