Ingredients

baking powder

chopped strawberries

raw sugar

teaspoon
cinnamon
Instructions
Line a muffin tin with paper cups or spray generously with non-stick spray. Pre-heat your oven to 400°.
Dice your strawberries into bits about ¼ inch in size. Toss them in 2 tablespoons of flour and set aside.
In a separate large bowl, add the softened butter and sugar and beat with a hand mixer until light and fluffy.
Add in the eggs, milk, and vanilla extract and beat again until everything is smooth and combined.
in the same bowl, sprinkle in the flour, baking powder, and salt. Use a spatula to stir everything together just until you see no more dry flour.
Gently fold the diced strawberries into the batter.
Spoon the batter evenly into the prepared muffin cups.
Mix together the raw sugar and cinnamon and sprinkle over each muffin.
Bake for about 20-23 minutes or until a toothpick inserted in the center of a muffin comes out clean.
