Stove Top Stuffing Meatloaf

I've been wanting to post this Stove Top Stuffing Meatloaf for a while now! It's such an easy dinner recipe and the stovetop stuffing makes this such a flavorful and tender meatloaf recipe.

How to make meatloaf with Stovetop stuffing:

The first step in making this meatloaf is to moisten the stuffing. I like to use milk for this. This ensures that the stuffing won't "steal" all of the moisture from the meat and the meatloaf will stay tender with no hard bits of stuffing.

How do you keep meatloaf from falling apart when you cook it?

The best way to keep meatloaf from falling apart is to add the beaten eggs. Eggs act as a binder in meatloaf as they cook. You won't taste them but they are the best way to ensure your meatloaf will stay intact. Moistening the stuffing or breadcrumbs also helps but the eggs do the main job here!

After adding the milk to the stuffing, you can then add in the meat, seasonings, and eggs. I like to beat the eggs before adding to make sure they are incorporated evenly. You do not want to over mix the meat mixture or it can become tough. I like to take off my rings and just use my hands to get the job done!

Now, when it comes to shaping the meatloaf, you have a couple of options. You can use a regular loaf pan and just gently press the meatloaf into the pan. That's the traditional way to make a meatloaf. My favorite way to make a meatloaf is just on a sheet pan lined with foil. I actually do use a loaf pan to shape it but then I flip it over onto the foil. this allows a lot more of the grease to escape from the meatloaf as it cooks and makes it a lot easier to serve.

After shaping your stovetop stuffing meatloaf, you can add the ketchup on top. I like to add a bit of brown sugar to my ketchup as well. I think the slight sweetness goes so well with the savory meatloaf.

Once you've spread the ketchup on, you can bake the meatloaf while your stomach rumbles from the delicious smell!

Do you cook meatloaf covered or uncovered?

This meatloaf gets baked uncovered. That allows the ketchup on top to almost become more of a glaze and the edges of the meatloaf to get nice and browned.

Once the meatloaf has finished baking, you'll want to let it rest for about 10 minutes before cutting into it. Then serve with some yummy cream cheese garlic mashed potatoes!

Stove Top Stuffing Meatloaf

Ingredients
  

  • 1 box stove top stuffing (6 ounce)
  • ¾ cup milk
  • 1 ½ pounds ground beef
  • 2 eggs (beaten)
  • ⅓ cup ketchup
  • 2 tablespoons brown sugar
  • ½ teaspoon each: garlic powder, onion powder, salt

Instructions
 

  • Pre heat oven to 350°.
  • Add the dry stovetop stuffing to a large bowl. Add milk to the stuffing and fluff with a fork.
  • Add the meat, seasonings and beaten eggs to the bowl with the stuffing and mix gently just until everything is evenly combined.
  • You have 2 options for shaping the loaf:
    - Spray a loaf pan with non-stick spray and add the meat mixture to the loaf pan.
    or
    -Line a sheet pan with aluminum foil and spray with non-stick spray. Then shape the meat mixture into a loaf shape on the pan. (my personal choice since this allows more grease to escape)
  • In a small bowl, mix the ketchup with the brown sugar then spread over top of the meatloaf.
  • Bake for 1 hour (uncovered) then let rest for 10 minutes before serving.
    I like to serve these with Garlic Mashed Potatoes!
