This chicken and gravy recipe is pure comfort food! The seasoned chicken is shredded and smothered in a rich flavorful gravy. It's perfect for serving over mashed potatoes or even biscuits!

How to make chicken and gravy:
To make homemade chicken and gravy you'll first want to start by seasoning the chicken and setting it aside while you work on the gravy with the gravy. This gives the chicken a bit of time to absorb the seasonings.

Once you've seasoned and set aside the chicken, you can start workin on the gravy. It's actually just a really simple onion gravy. But don't worry...simple does NOT equal boring!
You'll start by adding olive oil and butter to a pan and cooking onions and a bit of garlic until they are soft. At this point, you'll already be smelling the goodness!

Once the onions and garlic are soft, you'll add in all purpose flour. This is what will thicken your gravy and make it "gravy" instead of just a sauce. You'll want to mix everything together until you see no more dry spots of flour.

After whisking in the flour, you'll see a thick paste and you'll want to cook that for just about 1 more minute. (Be sure to use a plastic whisk if you are using a non-stick pan)

Next you'll slowly pour the chicken broth into the pan while you're still whisking. You'll want to make sure to dissolve all of the flour mixture into the broth. This is also when you'll add in the remaining seasonings.

Once the broth has come up to a boil, you'll add in the seasoned chicken. Then lower the heat to a simmer (smaller, slower bubbles) and cook the chicken in the gravy until the chicken is fully cooked. You want to make sure to use low heat and just a simmer. Chicken that cooks too quickly can easily become tough.

After the chicken is fully cooked, use tongs to remove it from the gravy and use 2 forks to shred the meat.

Once you've shredded the chicken, you can add it back to the gravy, mix it together, and you're ready to serve!

Chicken and Gravy
Ingredients
- 2 pounds chicken breast
- Salt, pepper, garlic powder, paprika, oregano (see below for measurements)
- 3 tablespoons butter
- 3 tablespoons olive oil
- β cup diced onion
- 2 teaspoons minced garlic
- ΒΌ cup all purpose flour
- 3 cups chicken broth
Instructions
- Heat a large skillet over medium heat and add in the butter and olive oil.
- While the pan is heating, dice your onions, mince the garlic, and split each chicken breast in half to make them thinner.
- Season the chicken liberally with salt, pepper, garlic powder, and paprika. (I used about Β½ teaspoon of each) Set the chicken aside.
- Once the butter in the pan has melted, add in the onions and minced garlic. Allow to cook for about 5 minutes or until softened.
- Sprinkle the flour into the pan and whisk until you see no more dry flour spots. cook while whisking for about 1 minute.
- Pour in the chicken broth and ΒΌ teaspoon each of: salt, pepper, garlic powder, oregano, and paprika.
- Bring everything up to a bubble (it should start to thicken) then add in the seasoned chicken.
- Lower the heat to medium-low and allow the chicken to simmer (slow smaller bubbles) for about 15 minutes or until cooked throughout.
- Use tongs to remove the cooked chicken from the gravy. Add it to a bowl or plate and shred the meat then add it back into the gravy.
- Serve over mashed potatoes or biscuits and enjoy!
