Ingredients

chicken breast
Salt, pepper, garlic powder, paprika, oregano
(see below for measurements)

diced onion

minced garlic

Instructions
Heat a large skillet over medium heat and add in the butter and olive oil.
While the pan is heating, dice your onions, mince the garlic, and split each chicken breast in half to make them thinner.
Season the chicken liberally with salt, pepper, garlic powder, and paprika.
(I used about ½ teaspoon of each)
Set the chicken aside.
Once the butter in the pan has melted, add in the onions and minced garlic. Allow to cook for about 5 minutes or until softened.
Sprinkle the flour into the pan and whisk until you see no more dry flour spots. cook while whisking for about 1 minute.
Pour in the chicken broth and ¼ teaspoon each of: salt, pepper, garlic powder, oregano, and paprika.
Bring everything up to a bubble
(it should start to thicken)
then add in the seasoned chicken.
Lower the heat to medium-low and allow the chicken to simmer
(slow smaller bubbles)
for about 15 minutes or until cooked throughout.
Use tongs to remove the cooked chicken from the gravy. Add it to a bowl or plate and shred the meat then add it back into the gravy.
Serve over
mashed potatoes
or
biscuits
and enjoy!
