Roasted Potatoes and Green Beans

These Roasted Potatoes and Green Beans will get you out of that side dish slump! The green beans and the potatoes are packed with seasoning, roasted to perfection, then topped with parmesan cheese. They're easy enough for a weeknight dinner and tasty enough for a holiday side dish too!

How to roast potatoes and green beans:

The first step to make these green beans and potatoes is to trim the stringy ends off of the green beans and cut the potatoes into quarters. Since this recipe uses small red potatoes, you don't even need to bother peeling them. The skin is very tender but you could peel them if you have picky eaters.

Once prepared, you'll want to add the potatoes and green beans to two separate bowls. They cook at different times so this makes the prep easier.

Once separated, you'l want to coat both the potatoes and the green beans with olive oil and then mix together the seasoning blend. I like too use garlic powder, onion powder, paprika, and Italian seasoning but you could also add some red pepper flakes or cayenne if you like spice!

Next you'll sprinkle half of the seasoning mixture over the green beans and half over the potatoes. Toss both vegetables to coat them in the spices.

How long do you roast potatoes and green beans:

Potatoes take longer to cook than green beans. So for this recipe at 400 degrees, I roast the potatoes first for 20 minutes, then add the green beans for another 25 minutes.

The easiest way to roast these vegetables is to line the baking sheet with parchment paper. This makes clean up a breeze when you're done. As I mentioned above only add the potatoes to the sheet pan first so that they can get a head start on the cooking.

Once the potatoes have cooked for 20 minutes, carefully remove the baking sheet (using oven mitts of course) from the oven and toss the potatoes and add in the green beans.

Place the baking sheet back in the oven for another 25 minutes. Once you pull everything out of the oven, sprinkle the top with the parmesan cheese and let it melt over the potatoes and green beans then enjoy!

Roasted Potatoes and Green Beans

Ingredients
  

  • 1 pound baby potatoes
  • 1 pound fresh green beans
  • 2 tablespoons olive oil (divided)
  • 1 and ½ teaspoons salt
  • 1 and ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ⅓ cup grated or shredded parmesan cheese

Instructions
 

  • Pre-heat your oven to 400° and line a baking sheet with parchment paper.
  • Trim the ends off of the green beans and cut the potatoes into quarters and add them into 2 separate bowls.
  • Add 1 tablespoon of oil to each bowl and toss the vegetables to coat them.
  • In a small bowl, mix together the seasonings. (salt, garlic powder, onion powder, paprika, and Italian seasoning)
  • Sprinkle half of the seasoning mixture over the potatoes and half over the green beans.
  • Add the potatoes to the prepared baking sheet and place in the oven for 20 minutes.
  • After the 20 minutes, toss the potatoes and add the green beans to the baking sheet. Bake for an additional 25 minutes.
  • Immediately after removing the roasted green beans and potatoes from the oven, sprinkle them with the parmesan cheese and enjoy!
