This Lasagna Soup has all the familiar flavors of a great lasagna but with much less work! It can can be made in the crock pot or on the stove and only takes a few minutes of prep. It's perfect for a busy weeknight meal and also impressive enough for company!

How to make lasagna soup:
This post is focused on the slow cooker version but if you scroll to the recipe card below, you can see the included stove-top directions.
To start the lasagna soup, you'll first want to brown your meats, and veggies. This step can also be done a day or two ahead of time and kept in the fridge until ready to make the soup. You'll need 1 pound of meat. You can any combination of ground beef or turkey or Italian sausage. I like to use 50/50 beef and sausage.

Once your meat is browned and the veggies are soft, you can drain the grease and add the mixture to your slow cooker. (If you're making the whole recipe on the stove, you can just add your ingredients to the same pot with the meat.)

Once you've added the meat to the crock pot, you can add in the remaining ingredients (except the cheese and noodles). Since everything is cooked, this soup doesn't need to be in the slow cooker for a long time. But the cooking time does allow all the flavors to infused together so you don't want to rush it. It just needs 2 hours on high or 3 hours on low.

Can you cook lasagna soup longer?
YES! I know a lot of people like to have crockpot recipes ready when coming home from work. You can prep this the night before by cooking the meat and veggies and storing in the fridge over-night. Then set everything on low the next morning and enjoy when you come home. The longer it sits, the better the flavor will be.
Thirty minutes before you're ready to enjoy the soup, you'll want to make sure the slow cooker is on high then add in the broken lasagna noodles. They'll take about 30 minutes to soften.

Can you use no-boil lasagna noodle sheets in lasagna soup?
Yes you can! No-boil noodles work just fine in lasagna soup. They will cook a little faster than the traditional noodles so just check the texture after about 15 minutes.

Once the soup is finished, you can serve it immediately with a hefty dollop of ricotta cheese. I also added a sprinkle of parsley just for "pretty" sake but that's totally optional.

Lasagna Soup (Crock Pot)
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef and/or Italian sausage (I do ½ pound of each)
- 1 medium yellow onion (about ¾ cup diced)
- ½ green bell pepper (about ¾ cup diced)
- Salt and pepper (see measurements in the instructions)
- 3 large garlic cloves (minced)
- 4 cups beef stock
- 14 oz tomato sauce
- 14 oz can crushed tomatoes
- 2 teaspoons Italian seasoning
- 8 lasagna noodles
- ricotta cheese for topping
Instructions
- Add the olive oil, meat, onions, peppers, ¼ teaspoon salt and ¼ teaspoon pepper to a skillet and cook until the beef is browned, and the veggies are soft.
- Drain grease and add meat and veggies to the slow cooker.
- Add the beef stock, tomato sauce, crushed tomatoes, water, tomato paste, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon pepper to the slow cooker with the meat.
- Cover and cook on low for 3 hours or on high for 2 hours (if you are leaving the house, you can cook longer if needed. But it’s not necessary)
- 30 minutes before ready to eat, break the lasagna noodles into the soup and allow to cook for 30 minutes. (if your slow cooker is on low, raise it to high while the noodles cook)
- Serve and top with dollop of ricotta cheese.
- Alternate stove top directions: Begin in a larger soup pot. Follow step 1 then add the remaining ingredients (except the noodles and cheese, to the pot.Cover and simmer on low for 30 minutes. After the 30 minutes, bring a a full boil and add in the broken noodles and cook according to the time on the package.
