This sweet and juicy peach and blueberry cobbler is made entirely from scratch and is the perfect simple summer dessert.

If you've never made a cobbler before, there are a couple of different ways to make it. One common version has fruit on the bottom, and a biscuit topping. Other versions use a store bought yellow cake mix.
They're all great, but my very FAVORITE version - this one obviously - is made with a simple batter that goes on the bottom and rises to the top as the cobbler bakes with the ripe, juicy fruit. A crunchy, caramelized brown sugar crust tops it perfectly.
It's 100% homemade, 100% EASY, and 100% delicious!
While cobblers are usually made with one fruit only (most often peaches), I love to throw some blueberries into the mix. The peaches get super tender, but still hold their shape, while the blueberries melt into jammy puddles. Soooooo good. (Don't forget the scoop of vanilla ice cream ;)).
I will say that if you bake a lot, this recipe is probably going to seem a bit strange when you make it. You'll probably wonder if you misread things when you start pouring the super thin batter into a pan of melted butter.
Don't worry, it totally works, I promise!
Here's a step-by-step with photos, so you can see what it looks like to assemble this cobbler.
Peach and Blueberry Cobbler Step-by-Step
- Preheat the oven to 350 F. Place the cubed butter in a 3 quart (9 x 13 inch) baking dish or pan and put it in the oven for about 5 minutes to melt.

While the butter is melting in the oven, make the batter.
2. In a large bowl, combine the flour, granulated sugar, baking powder, and salt.
3. Add the milk and vanilla extract.
4. Stir until smooth. The batter will be very thin.

5. Pour the batter evenly over the melted butter. The batter will sink to the bottom, and the butter will rise to the top.
6. Stir together the peach slices, blueberries, and 2 teaspoons of fresh lemon juice.
7. Spread the fruit evenly over the butter/batter.
8. Sprinkle everything with ½ cup of brown sugar.

9. Bake until the top is golden and it no longer jiggles when you shake the pan a bit, about 40-50 minutes.

Let it cool for a 15 minutes or so and serve warm with a scoop of vanilla ice cream.

Can I use canned or frozen peaches and blueberries?
Yes, you can. If using frozen fruit, thaw the peaches first, but use the blueberries frozen. Thawed blueberries get super juicy and make everything purple!
If using canned peaches, be sure to drain them well.

Peach and Blueberry Cobbler
Ingredients
- ¾ cup butter cubed (6 oz)
- 1 ½ cups flour
- 1 ½ cups granulated sugar
- 3 teaspoons baking powder
- ¼ teaspoon salt
- 1 ¼ cups milk
- ½ teaspoon vanilla extract
- 3 cups fresh peach slices *see note
- 1 cup fresh blueberries *see note
- 2 teaspoons lemon juice
- ½ cup brown sugar
Instructions
- Preheat the oven to 350 F. Add the cubed butter to a 9 x 13 inch baking dish or pan. Place the dish in the oven for a few minutes until the butter is melted.
- Meanwhile, in a medium bowl, combine the flour, granulated sugar, baking powder, and salt. Add the milk and vanilla extract and stir until smooth.
- Pour the batter evenly over the melted butter in the pan (do not stir!). The melted butter will rise up over the batter.
- Toss the peach slices and blueberries with the lemon juice and spread them evenly over the batter (again, do not stir).
- Sprinkle the brown sugar evenly over the top and and bake 40-50 minutes until the top is golden brown. Allow the cobbler to cool a few minutes before serving.

I made this recently and LOVED it. I love a little spice with my fruit so I added a few shakes of ground cinnamon and ground ginger to the fruit, added some smashed ginger snap cookies to the brown sugar, and grated a little lemon zest on top. My husband loves a good cobbler and asked me to try this recipe. Since it's just the two of us, I cut the recipe in half using peaches, blackberries and he asked me to include some strawberries. While preparing the fruit, I inadvertently tossed everything in the brown sugar (my mistake) but still sprinkled brown sugar on top as the recipe instructed - it was not too sweet. He absolutely raved about this cobbler saying it was the best cobbler he has eaten!! Recipe is a keeper and will definitely make it again!

The ONLY thing I would change is not adding so much granulated sugar. Next time I would cut that down to about 3/4 cups instead of 1 1/2.
Other than that slight change this was AMAZING. I have to hide it from myself so I won't eat the whole pan.

Bubbled over the baking dish and created a huge mess in the oven 🙁 also appears very undercooked but my fruit was browned on top and the edges of the cobbler were crispy. The taste would probably have been delicious only it is raw as I try enjoying it for lunch today. subbed coconut oil instead of butter. seems very oily and I wonder if the amount of butter called for in this recipe kept it from cooking properly.

Jen, it's very inappropriate to significantly alter a recipe (butter and oil do not impart the same taste or texture/mouth feel), then negatively rate it bc *you* messed it up. Switching oil for butter will drastically affect a biscuit/dough type topping, whereas it won't alter the texture of a cake. You screwed it up. Please make the recipe exactly as written, then rate it on that outcome, not your inability to successfully (or, in your case, unsuccessfully) sub ingredients.
I'm not rating the recipe, unlike many people here who've given it 5 stars, but haven't actually made it. I came here to comment, which is possible w/o falsely rating a recipe.

Neighbor gave us some fresh peaches and daughter bought some local blueberries and voila…a delicious cobbler I will make again for company some day. We used cookie tin under glass dish as batter filled to top. Glad I did since it spilled over some. May have had more fruit than recipe called for as gauged it by looks (love fruit so didn’t mind extra). Might cut back bit on white sugar next time but it was not overly sweet. Easy and delicious! I tried this after a mediocre result from a recipe by a professionally trained pastry chef that I follow- this recipe was far superior! I added an extra cup of peaches because I wanted to use them up, but otherwise followed it exactly as written. The extra fruit did not affect the consistency or flavor, it was perfect and there was still more than enough "cake" relative to the fruit. I would add the extra cup of fruit if I make it again, because who doesn't love more dessert? I put a baking sheet under it in case it overflowed but even with the extra fruit it didn't even come close. This recipe is a keeper!

This was absolutely delicious. I accidentally forgot the brown sugar topping and it was still a tad too sweet for us. In the future I'll try it with the topping but cut back on the granulated sugar on the batter. (And, since we have a bumper crop of peaches on our trees this year, I have plans to make this many more times!)

This recipe was INCREDIBLE and the perfect addition for our family gathering on the 4th of July. I even used over-ripe, mealy peaches (because that’s all I had) and you couldn’t tell. A few minor modifications: I used 1.5-2cups of blueberries. While I didn’t stir the batter after adding the peaches and blueberries, I did press them down slightly into the batter. Served with whipped cream! (Vanilla ice cream would have also been great)

Made this today and it was absolutely delicious! Added just 1/4 cup sugar to the lemon, peaches, and blueberries and tossed it together and let it sit before adding it to the batter. Had to bake mine for about 60 to 70 minutes. Started to get a little brown around the edges before the middle was done, so I covered the outside edges with foil and let the inside continue to bake. Great recipe!!

The overall flavor was really good and it was SO simple to make! However, I did reduce the granulated sugar to 1 cup as it seemed like it would be too sweet as written. If I make this recipe again, I might even reduce the granulated sugar more… the sweetness seems to take something away from the yummy, fresh fruit.
Also, the butter was way too much. The outer edge with the butter was almost unappealing. I would probably just grease the pan a little and omit the butter in general.
Like I said though, an overall tasty, good recipe.

I read the recipe and the reviews so I thought I’d try it. I never expected it to be even better than everyone claimed!
I did make some adjustments but it came out perfectly. We’re leaving for vacation and I wanted to use up perishables.
I only had 4 oz of butter and no milk in the house, so I used half and half. I had 3 peaches and mixed berries-blackberries, blueberries, and strawberries. I used them all.
I need to eat gluten free. I used Walmart’s Great Value gf flour, my usual.
Due to the gf flour and the half and half the batter was thicker than the photos but it still worked.
This was sensational!
We’re having a backyard party in a couple of weeks and this will definitely be on the dessert table!

I just made this cobbler for the second time and it was great! I did change the recipe a little bit this time around. I was almost out of flour so used half oat flour and half white which came out really well. I also reduced the sugar, the first time it was a bit too sweet for my liking so I reduced the white sugar to 3/4 cups and it was perfect! Excellent recipe
