Pre-heat your oven to 350℉ and line a baking sheet with parchment paper.
In a large bowl, mix together the peanut butter, egg, and sugar. I like to use an electric hand mixer but you could also use a spatula. The dough might be crumbly but it will come together as you scoop it.
Once the dough has formed, use a cookie scoop or a spoon to scoop enough dough to make a ball about the size of a golf ball. After scooping, roll the dough balls between your palms to make a smooth round ball.
Place the dough balls on the baking sheet then take the back of a form and make the criss cross pattern on the top of each cookie. Be careful no to smash them too flat.
Bake in the pre-heated oven for 8-9 minutes. The center might still look glossy but it's better to under cook these than over cook them.
Once the cookies are finished baking, remove them from the oven and allow them to cool before moving them.
