Chipotle Ranch Pasta Salad

 


Since it’s summer (yay!) and time for picnics and cook-outs, I wanted to share how I make this super easy “Suddenly Salad” chipotle ranch pasta salad. It’s so quick and easy and you can even make it the night before so it’s a perfect dish to bring to any summer get-together!

So the pasta salad is not your traditional pasta salad. It’s a chipotle ranch pasta salad and it’s SO GOOD! It’s got lots of fresh flavors and a creamy chipotle sauce and it’s so simple to make!

Chipotle Ranch Pasta Salad

So here’s what you need:

  • 1 Suddenly Salad pasta kit (Chipotle Ranch Flavor)
  • 1 cup shredded cheese (I used a Mexican blend)
  • 1 cup frozen or fresh corn kernels
  • 1 cup cherry tomatoes (halved)
  • 1 ripe avacado (pitted and diced)
  • Chopped cilantro (optional but highly recommended) 🙂

First thing you want to do is prepare your “Suddenly Salad” kit as directed. Make sure you use a large bowl to put the finished product in! 🙂

And I had every intention of adding black beans to this recipe but GUESS WHAT…it comes with black beans in it!Chipotle Ranch Pasta Salad

So anyways, once your pasta salad has been prepared and cooled (you don’t want to melt your cheese), go ahead and add in all of your other ingredients except for the avocado and cilantro and toss. I add my avocado at the end and just drop them on top so they don’t get mushy and garnish with the chopped cilantro. THAT’S IT!! How easy was that?!

(Note: If you use frozen corn, either thaw it in the microwave first or just make sure it’s come to room temp before serving. I usually just throw it in frozen and by the time we are ready to eat, it’s fine)

    Oh! All the varieties look great, but I would love to try the Southwest pasta salad. I think my family would love having that for dinner or as a side dish. I also really want to try the chipotle one that is in your blog post!

    Visited the site and I love the sound of the classic variety, i think my picky kids would enjoy it. I like the recipe for the black and blue pasta salad with steak, looks delicious!
