How to shred chicken the FAST way!

So this really isn't a "recipe" but it's such a time saver that I thought I'd share it with you. This is so easy that I promise you will never shred chicken with a fork (while making those horrible fork/plate scraping sounds) again!

The only things you need are your chicken pieces and a stand mixer. I have this KitchenAid one and I use it ALLLLL the time! When I got it (as a wedding gift 5 years ago) I thought it would be one of those appliances that just takes up space and never gets used. Well I am shocked at how often I use it!

 

To shred your chicken all you need to do is:

  1. Add your warm chicken to the stand mixer . It doesn't have to be hot but definitely not cold or it's too hard on the mixer. I usually do about 5 or 6  boneless chicken breasts at a time. 
  2. Put the cover/shield thing on the mixer so you don't get splattered with chicken pieces.
  3. Lock the top down on your mixer or it will bounce like crazy scaring your children. (not that I've done this) 🙂
  4. Using the paddle attachment, turn your mixer on for about 25 seconds. 
  5. THAT'S IT!

I told you it was easy! I usually just sauté or bake some chicken breasts or use a rotisserie chicken from the store and shred a bunch and then freeze it for things like chicken nachos or other easy weeknight meals!
