This parmesan crusted salmon is one of those meals that I go to when I need to get dinner on the table quickly. And not only is it quick but it tastes great and it's so easy! You really can add this crispy parmesan crust to almost any fish and it comes out perfect every time.

So here's what you need to make the Parmesan Crusted Salmon:
- 4 salmon fillets
- ¼ cup parmesan cheese
- ¾ cup panko breadcrumbs (plain)
- 1.5 teaspoon garlic powder
- 1 teaspoon salt
- 2 tablespoon chopped parsley (optional but recommended)
- Zest from one whole lemon (HERE'S a zester if you don't have one)
- ½ cup mayonnaise
Pre-heat the oven to 450.
Combine all of your ingredients except for the salmon in a bowl and mix together. I know the mayonnaise seems weird but it's what gives this so much moisture and bonds everything together!
Spray a pan with non-stick spray and lay your salmon fillets on the pan. Take the panko mixture and spoon it evenly on each of the 4 fillets. I just my hands to kind of pile it on top. I also like to sprinkle a little extra parmesan on top...just because 🙂
Bake the salmon for 15 minutes and enjoy!

- Spray a baking sheet with non-stick spray and lay the salmon fillets on the pan.
- Evenly spoon the mixture on the top of the salmon fillets.
- Bake for 15 minutes.
- Enjoy!
