Easy Rosemary Focaccia Bread

This Easy Rosemary Focaccia Bread is shockingly simple (especially for a yeast recipe) and can be made in under an hour and a half which is pretty darn short for a bread recipe! It's moist and flavorful and the perfect accompaniment to any meal!

What is Focaccia bread:

Focaccia is a flatter Italian bread made with plenty of olive oil, fresh herbs, and salt. It's moist and perfect for dipping!

How to make quick focaccia bread:

  • You'll first start by mixing the dry ingredients together and then adding in the warm water and olive oil until a dough forms. It doesn't need to be pretty or super smooth (as you can see from my  creepy dough pile. If it's too sticky for you to work with, you can add a little more flour. If it's too dry, just add some more water. It's a very forgiving recipe and you can work with it easily.

  • Pour a little olive oil in the pan to prevent it from sticking and then plop in your dough ball.

  • After placing the dough in the pan it will need to double in size so you can set it to rest somewhere warm. Here's some ideas on where you can set it.

Where to put bread to rise:

  • On top of the refrigerator
  • In an oven with the light on (not the heat)
  • In the microwave with the stove lights on
  • Next to a lamp
  • The garage
  • Anywhere that is clean and warm!

 

  • Once the dough has doubled in size, you can punch it down. To do this, I like to rub olive oil on my hands (hello moisturizer!) and press the dough down with the tips of my fingers. This also will make the holes in the top of the dough where the olive oil will pool into.

  • Sprinkle the top of the dough with the garlic powder, salt, and rosemary and it'll be ready for baking!
  • Once the bread is finished baking, wait about 15 minutes then turn it over onto a plate and serve warm.

This easy rosemary focaccia is honestly one of my favorite breads to make when company comes over. You can customize it with basically any herbs or seasonings that you like and it's so easy to make. I know that working with yeast can sometimes be scary but bread is basically fool proof! Can't wait for you to try it!

Easy Rosemary Focaccia Bread

Equipment

  • 9" cake pan

Ingredients
  

  • 3.5 cups all purpose flour
  • 1 envelope rapid rise yeast
  • 1 tablespoon white sugar
  • 2 teaspoons salt (plus a pinch more for topping)
  • 1 and ¾ cups warm water (about 110 degrees...warm tap water is fine)
  • 4 tablespoons olive oil (divided)
  • 1 tablespoon fresh chopped rosemary
  • ⅛ teaspoon garlic powder (or a couple pinches)

Instructions
 

  • Add the flour, yeast, sugar, and 2 teaspoons of salt to a large bowl and stir to combine.
  • Pour in the water and 2 tablespoons of olive oil and stir until a shaggy dough forms. (If the dough seems too sticky to form a loose ball, sprinkle in a little more flour.)
  • Grease a 9" cake pan very liberally with olive oil and place the dough in the center. Leave it in a warm place to rise for 30 minutes. (I set mine in the microwave and turn the stove light on. It lets off just the slightest heat and warms the bread nicely)
  • After the 30 minute rise, dip your fingers in olive oil and poke holes all over the dough.
  • Pour the remaining 2 tablespoons of olive oil over the bread and let it run into the holes.
  • Sprinkle with the rosemary, ⅛ teaspoon of salt, and garlic powder.
  • Pre-heat the oven to 375 degrees.
  • Let the dough rise again for 15 minutes.
  • Bake for 30 to 35 minutes or until the bread has a golden crust on top.
