This Garlic Soy & Lime Chicken Marinade is by far, my favorite chicken marinade! The soy in the marinade acts as a brine and makes this chicken come out incredibly juicy!

I don't think I have used any other marinade since I starting using this one. I marinade mine over night and grill it in large batches to eat for lunches during the week. 🙂

Here are your ingredients:

  • ¼ cup soy sauce (I use low sodium)
  • 4 large garlic cloves minced
  • 1 teaspoon liquid smoke
  • 3 tablespoon olive oil
  • juice from 2 limes
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • ½ cup water
  • ¼ cup brown sugar
  • About 2 lbs of chicken

Dump all of your ingredients in either a mason jar or a ziploc bag and shake it up.

The best way to have the chicken cook evenly is to pound the chicken breast to about a half inch thick so they cook faster and evenly. I usually use a pound of chicken breasts and use half of my jar of marinade. You can just save the other half in the jar in the fridge. It'll keep for a couple weeks.

Add all of your chicken to a ziploc bag and pour in your marinade. You should let it marinade over night...that will give you the juiciest chicken 🙂

After you've marinaded your chicken, you can prepare it however you'd like. I like to grill mine because it stays nice and juicy and the flavor from the grill really brings out that liquid smoke flavor 🙂  I grill mine on hight heat for 4 minutes per side.

How much difference to you think the liquid smoke makes? How do you think it would work without it?

Linda the liquid smoke is a big part of what makes this taste SO good! You can try it without the liquid smoke and I'm sure it will taste fine but I'd encourage you to try it with it and see how great it is. You can find it in the grocery store around the bbq sauces and marinades 🙂
