Taco Casserole
Ingredients

pound
ground beef
you can also use ground turkey
1
yellow onion
finely chopped
2
cups
of chunky salsa
I use mild since the kids eat it too
1
ounce
can of black beans
15, drained
1
ounce
packet of taco seasoning
1
4
flour tortillas
1
cup
of corn kernels
frozen or canned
½
cup
of sour cream
2
cups
of shredded cheese
Cilantro for garnish
optional
Instructions
Heat your oven to 400 and grease a 9x9 casserole dish.
Chop your onion and heat a large skillet to medium high heat.
Add your meat and chopped onion to the skillet and cook until the meat is browned. (drain if necessary).
Add all other ingredients (except the cilantro) to the skillet and stir together.
Layer in the pan in this order: meat mixture, cheese, tortilla (repeat until your pan is filled and end with a tortilla and sprinkle cheese on top).
Spray a sheet of aluminum foil and cover pan (sprayed side down) and bake at 400 degrees for 30 minutes.
Let stand for 10 minutes before serving.
Slice and garnish with cilantro and serve with tortilla chips!!
