So this taco casserole is one of those dinners that I make pretty often at our house. It’s quick and it’s enough to feed the 4 of us and have leftovers too! (This taco casserole also freezes great!)
It has all the yummy taco toppings inside and you can add in or top it with pretty much anything else you like! Even my 18 month old eats this taco casserole like a champ! It’s layers of cheese, tortillas, and a yummy salsa and sour cream sauce! So here’s how you make it:
Here’s what you need to make the Taco Casserole:
- 1 pound ground beef (you can also use ground turkey)
- 1 yellow onion (finely chopped)
- 2 cups of chunky salsa (I use mild since the kids eat it too)
- 1 (15 ounce) can of black beans (drained)
- 1 (1 ounce) packet of taco seasoning
- 4 flour tortillas
- 1 cup of corn kernels (frozen or canned)
- 1/2 cup of sour cream
- 2 cups of shredded cheese
- Cilantro for garnish (optional)
First thing you’ll want to do is heat your oven to 400 degrees and spray a 9×9 dish with cooking spray. Then chop your onion finely and in a large skillet, cook your meat and your onion together until the meat is no longer pink.
Drain your meat if needed and then turn off the heat and in the same skillet, add in your salsa, sour cream, beans, corn, and taco seasoning.
It’ll look like this after you’ve stirred everything together.
Now for the layering! Take a spoonful of your meat mixture and spread it in the bottom of the pan, then sprinkle with cheese and add a tortilla on next.
Keep layering until your reach the top. Meat, cheese, tortilla, meat, cheese, tortilla….You get it 🙂 When you get to the top, end with a tortilla and sprinkle a layer of cheese on top.
Tip: Take a piece of aluminum foil and spray it with cooking spray and cover the top of your dish (sprayed side down).
Bake at 400 for 30 minutes. When you take it out of the oven, let it sit for about 10 minutes before serving. I like to serve mine with tortilla chips to scoop up all the yummy meat mixture that falls out! Enjoy!!
Taco Casserole
Ingredients
- 1 pound ground beef you can also use ground turkey

- 1 ounce can of black beans 15, drained
- 1 ounce packet of taco seasoning 1
- 4 flour tortillas
- 1 cup of corn kernels frozen or canned
- 1/2 cup of sour cream
- 2 cups of shredded cheese
- Cilantro for garnish optional
Instructions
- Heat your oven to 400 and grease a 9x9 casserole dish.
- Chop your onion and heat a large skillet to medium high heat.
- Add your meat and chopped onion to the skillet and cook until the meat is browned. (drain if necessary).
- Add all other ingredients (except the cilantro) to the skillet and stir together.
- Layer in the pan in this order: meat mixture, cheese, tortilla (repeat until your pan is filled and end with a tortilla and sprinkle cheese on top).
- Spray a sheet of aluminum foil and cover pan (sprayed side down) and bake at 400 degrees for 30 minutes.
- Let stand for 10 minutes before serving.
- Slice and garnish with cilantro and serve with tortilla chips!!
- Enjoy!!
