In a large bowl, whisk together your milk and the instant coffee granules and set it aside to dissolve.
In a small bowl, whisk together your dry ingredients: flour, sugar, baking powder, cinnamon, salt and set aside
Now in the bowl with the milk and coffee, add the melted butter, egg, and vanilla and whisk everything together.
Add the dry ingredients into the bowl with the wet ingredients and stir together just until combined then fold in the chocolate chips.
Spray a mini muffin pan with non-stick spray fill each spot with 1 heaping tablespoon of batter.
Bake for 10 minutes or until a toothpick comes out clean.
For the Cream Cheese Spread
If you have a small food processor, combine all of the ingredients and blend until combined. (It's ok if there's still chunks of chocolate)
If you do not have a food processor, soften the cream cheese (you can microwave it for about 20 seconds) and add all the ingredients to a small bowl and use a spoon or hand mixer to blend together.

If you'd like to make standard sized muffins, bake for 17-20 minutes. (Makes about 14 muffins)
