Cook your bacon strips, drain them on paper towels, and chop into small pieces.
Combine all of your ingredients (reserving ½ cup of cheese for the topping) in a large bowl.
Spread the mixture into a greased pie pan or cast iron pan and sprinkle with your cheese that you set aside. (I use a mixture of both cheeses for the topping).
Bake at 400 degrees for 25 minutes or until the top is browned and bubbly.
I like to serve with the dip with a thin sliced baguette!
