Ingredients
3
pounds
red potatoes
1 and ¼
cup
grated gruyere cheese
1 and ¼
cup
grated parmesan cheese
1
small yellow onion
(about ⅓ cup diced)
2
cups
heavy cream
2
teaspoons
salt
1
teaspoon
black pepper
1
teaspoon
garlic powder
1
tablespoon
fresh thyme leaves
Instructions
Pre-heat your oven to 400 degrees.
Slice your potatoes as thin as you can. I use
this mandolin slicer
but you can use a knife and cut them to about ⅛ inch thick.
Mix your cheeses together and set aside ½ cup of cheese for the topping.
In a large bowl, whisk together the remaining 2 cups of cheese, onion, cream, salt, pepper, garlic powder and thyme.
Add the potatoes to the mixture and toss to combine. The best tool for this is just your hands!
Grease a 9x13 baking dish with either butter or cooking spray and add in the potato mixture.
Top the potatoes with the remaining ½ cup of cheese and cover the dish tightly with foil.
Bake for 1 hour then uncover the potatoes and bake for another 30 minutes or until the top is browned.
Let the potatoes rest for 15 minutes before serving.
