Guava Cream Cheese French Toast Roll-Ups

Ingredients

white sandwich bread

softened cream cheese
(about 6 ounces)

thin slices
of guava paste
(about 6 ounces)

milk

vanilla extract

white sugar

heaping teaspoon
ground cinnamon

Instructions
Start by cutting the crust off of the bread slices.
Press the bread to about ⅛ of an inch thick wide with the rolling pin.
Spread the cream cheese mixture evenly over one side of the bread slices.
Cut the guava paste into slices that are about ¼ thick. Lay the guava on the bottom of the bread slices on top of the cream cheese.
Roll everything up together until you have 12 roll-ups.
Heat a skillet over medium low heat.
(You don't want these to brown too quickly or the inside won't get gooey enough.)
While the skillet is heating, mix together the eggs, milk and vanilla extract in a small dish.
Dip each roll-up into the egg mixture then add to the hot skillet and cook each side until browned. (about 2 minutes per side).
Mix together the cinnamon and sugar in a small bowl.
Once the roll-ups are done cooking, roll each one in the cinnamon sugar mixture then serve warm.
