Preheat your oven to 250 degrees.
In a small bowl, add your egg whites, vanilla extract, and water and mix together until frothy.
Add your pecans to a bowl and pour the egg white mixture over the pecans and toss to coat.
In a large ziploc bag, add your sugar, cinnamon, pumpkin spice, and salt.
Add in your pecans, seal the bag, and shake it to coat all of the pecans.
Line a baking sheet with parchment paper or spray it with non-stick spray.
Add your pecans in a single layer and bake for 1 hour.
Turn the pecans half way through the baking time. (I just take a spatula and toss them around as best I can to unstick them from each other.
Let cool and enjoy!!
