This recipe for blueberry compote is easy and has so many uses! The combination of blueberries, lemon, and sugar make this compote sweet but perfectly tart as well.

What is blueberry compote?
Blueberry compote is a chunky sauce containing whole berries as well as some that have been cooked down. Because of the large fruit chunks, it's not as spreadable as a jam or jelly but it's perfect for topping pancakes, and desserts!
How to make blueberry compote:
You'll first want to start by choosing your blueberries. Frozen or fresh is totally fine. I used fresh berries for this recipe. You want to add all of your ingredients (only 1 cup of the berries) to a small saucepan.

Once added to the sauce pan, you'll cook the mixture for about 10 minutes. You'll see the berries start to break down and the color of the sauce to change.

After the 10 minutes, you can add in the remaining berries. Reserving these just allows the sauce to have some whole berries that are not as broken down and gives you that "compote" texture.

Stir these additional berries in and then cook for about 5-7 more minutes. The sauce should be nice and thick at this point. Allow it to cool for a few minutes and serve warm!

Blueberry Compote
Ingredients
- 2 cups fresh or frozen blueberries (divided)
- ¼ cup water
- ¼ cup white sugar
- 1 teaspoon lemon zest
- 2 teaspoons lemon juice
- 1 teaspoon vanila extract
Instructions
- Add 1 cup of blueberries, water, sugar, lemon zest, lemon juice, and vanilla extract to a small saucepan.
- Cook over medium heat while stirring for 10 minutes.
- After the 10 minutes, add in the remaining blueberries and stir. Cook for an additional 5-7 minutes. The sauce should be thickened.
- Remove from heat and allow to cool for a few minutes before serving warm. Store in the fridge in an airtight container for up to a week.
